I feel stupid asking, but better sooner than later I figured. Do Marines ever serve on submarines ? I ask because I’ve heard one of the roles of the marines is “protecting the nuclear deterrent” but as far as I’m aware they are all on subs ? If anyone could offer any knowledge I’d be very interested.

Nah I can’t imagine there’s a time to ever be on one. Unless you are a top secret, underwater knife fighting, ninja.

Protecting the nuclear deterrent just means they guard the more sensitive side of things on the sub bases.

I spoke to a marine in 43 commando who went to Norway on board a submarine but it isn't normal to be deployed on one for obvious reasons

You'll not be deployed on one, but being part of FPGRM you may be tasked to clear the inside of one from any threats. Which is why 43 CDO do a lot of CQB training and not just in buildings. They'll also use specialist equipment such as short barrel C8's to be able to get into the tight areas onboard ships and subs.
